Recipes for New Orleans Gumbo

 

Gumbo is a Cajun dish that originates in New Orleans, Louisiana. It’s typically served over rice, though many versions these days include rice in the gumbo itself. Its main ingredients are sassafras and bay leaves, which give it its recognizable flavor. Other ingredients vary, but may include okra, shrimp, crawfish (crawdads or crayfish), chicken, or different types of sausage like andouille. It also typically contains the “Cajun Trinity”, which is the Cajun version of the traditional French mirepoix, but contains onions, celery and bell peppers instead of the French onions, celery and carrots. It is often thickened with roux (a mixture of butter and flour), but may also be thickened with okra.

Gumbo Ya-Ya Recipe

One of the most popular types of gumbo is known as Gumbo Ya-Ya. It includes chicken and andouille sausage.

  • 1 lb. (4 sticks) unsalted butter
  • 3 cups all-purpose flour
  • 2 red bell peppers, in medium dice
  • 2 green bell peppers, in medium dice
  • 2 celery stalks, in medium dice
  • 1 ¼ gallon (20 cups) chicken stock
  • 2 tablespoons Creole seasoning
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried hot red pepper flakes
  • 1 teaspoon chili powder
  • 1 teaspoon dried thyme
  • 1 tablespoon chopped garlic
  • 2 bay leaves
  • 2 tablespoons kosher salt
  • 1 lb. andouille sausage, cut into ¼ inch-thick slices
  • 3 ½ lb. chicken, roasted and boned
  • Hot sauce, to taste
  • Cooked rice

Melt butter in a 12-quart stockpot over medium low heat. Slowly add in one third of the flour. Stir constantly with a wooden spoon and cook for approximately 30 seconds. Add another one third of the flour, still stirring constantly, and cook for another 30 seconds. Finally, add the remaining one third of the flour and cook for another 30 seconds, stirring constantly. Reduce the heat to low and cook for 45 minutes to an hour, or until the roux is very dark brown, but not black, stirring constantly.

Add bell peppers and keep stirring for 30 seconds. Add onions and celery, still stirring, and cook another 30 seconds. Add chicken stock to the roux, and make sure to keep stirring this constantly to prevent lumps from forming. Add remaining ingredients except chicken, rice and hot sauce. Bring mixture to a boil and then reduce heat to a light simmer. Simmer uncovered for about 45 minutes, stirring occasionally to prevent sticking. Add chicken and simmer for 15 minutes. Add hot sauce to taste. Serve gumbo over cooked rice.

This recipe makes about 6 quarts, and leftovers can be frozen.

Seafood Gumbo Recipe

Seafood gumbo can contain just about any type of seafood that is native to New Orleans. This version contains shrimp and blue crab.

  • 2 lbs fresh or frozen shrimp, head on about 40-50 count per pound
  • 2 small blue crabs, fresh or frozen
  • 3 quarts water 2 tablespoons cooking oil
  • 1 quart fresh or frozen okra, sliced into ½ inch rounds
  • 2/3 cup cooking oil
  • ½ cup all purpose flour
  • 2 cups chopped onions
  • 1 cup chopped green bell pepper
  • ½ cup chopped celery
  • 1 teaspoon garlic, finely shopped
  • 1 16oz can chopped tomatoes
  • 2 bay leaves
  • 2 teaspoons salt, or to taste
  • ½ teaspoon black pepper (or to taste)
  • ½ teaspoon white pepper (or to taste)
  • ¼ teaspoon cayenne pepper (or to taste)
  • Steamed rice

Peel and devein shrimp. Cover and place in the refrigerator until they are needed.

Rinse shrimp shells and heads and place in a stock pot with 2 quarts of water. Bring to a boil, then reduce heat to a simmer and cook for 30-45 minutes to make a stock for the gumbo. Strain and discard heads and shells and reserve stock.

Wash crabs well and place them in a stock pot with 1 quart of water. Bring to a boil, then reduce heat to a simmer and cook for 20-30 minutes. Strain. Set crabs aside to cool and reserve crab stock. When crabs are cool, break off the two large claws and then break the bodies in half. Set these aside.

In a large, heavy-bottomed skillet, heat 2 tablespoons of cooking oil. Add okra and sauté over medium high heat for about 10-15 minutes. Make sure the okra is tender.

Add 2/3 cup oil to an 8-quart heavy-bottomed Dutch oven. Add flour and cook over medium high heat until a rich mahogany color (dark brown, but not black). Add onions, bell pepper, celery and garlic. Sauté, stirring occasionally, until vegetables are tender, but not mushy. You can allow the vegetables to stick to the pan slightly and scrape them off the bottom with a spatula or metal spoon to caramelize the vegetables well and bring out the most flavor.

Add tomatoes, bay leaves, black pepper, white pepper, and cayenne pepper, plus salt to taste. Cook 10 minutes, allowing everything to stick slightly and scraping it. Add cooked okra and cook 10 more minutes.

Add crab stock and half the shrimp stock. Stir constantly until the mixture comes to a boil. Then lower the heat to a simmer. Cover the pot partially (venting to let steam escape) and simmer 30 minutes, stirring occasionally. Use remaining shrimp stock to dilute the gumbo only if it seems to thick.

Add more salt to taste, if needed. Add the broken crabs and simmer for about 10 minutes. Then add the peeled, deveined shrimp. Bring back to a boil and cook until the shrimp are firm and pink, which should take about 5 minutes. Remove gumbo from the heat. Serve over steamed rice.
