Watermelon Tomato Gazpacho Recipe

To me, nothing signals the fact that summer is really here like the presence of fresh, homegrown tomatoes and watermelon ripe off the vine. Those pitiful things they sell in grocery stores all winter are nothing compared to the farm fresh stuff available at those little roadside farm stands in the summer. And when this happens, its’ time to partake in the bounty with recipes like this Watermelon Tomato Gazpacho!

It’s got the perfect blend of sweet, sour, salty and spicy, and it’s served cold so it’s perfect on a really warm summer day. It’s also crazy easy to make, because it’s done in a blender!

Because some people really dislike the taste of cilantro, you can substitute basil. It still tastes amazing with basil, because what goes better with tomatoes than basil?
